I manage a busy restaurant, which we clean with in-house personnel. What are some good ways to reduce the slip and fall danger in a hectic, crowded kitchen with a greasy hard floor?

I'm gonna turn this one over to my buddy Stan Zimmer, owner of Marble Shine Services, Marble Restoration and Care, of Sac City, Iowa, because a while back he sent us a brief article about this very topic:

"Dear Mr. Griffin,

Just a few ideas about slip/fall problems in restaurants with tile floors, which are especially concerned about the buildup of grease and oils.

All too often people look for the most complicated ways to approach such problems. It is thought that if we make the tile rough and textured enough this will solve the problem. However, this actually makes more room for grease and oils to settle into! Using cheap and ineffective cleaners lets the dirt settle into the tile a little more. The result is a dirty-looking textured tile that still has grease and oil which can cause slips and falls.

There are often two approaches used to roughen up a tile surfaceóto treat it with an acid, or to add grit to the finish or coating. Unfortunately for a restaurant, both of these methods just create more surface area for grease and oily dirt to cling to!

Degreasers are plentiful, and do indeed breakdown grease, but most of them lack the ability really needed in this situationóto float the contamination to the surface, where it can then be floated away and removed by cleaning. But Stoneclean & Strip cleanser will do the job. I recently sold some to EXXON Corp. headquarters in Dallas, Texas. They had flamed granite floors made dangerous by oil contamination, and the granite was discolored as well. They mixed Stoneclean & Strip 1 to 3 with water and allowed it to dwell for 5 minutes. They reported to me that "a gross looking white chicken-fat like substance came floating to the surface." This was evidence of the grease not being broken down but rather floated to the surfaceóand flamed granite is a lot more textured than the tiles in restaurants.

With the grease lifted and then removed with thorough cleaning and rinsing, the slip resistance capability of the tile or finish can do then job it is supposed to do.

Let's face it, most restaurants that do in-house cleaning don't have the best cleaning helpóso at least the cleanser should work well. Stoneclean & Strip may cost a bit more than other cleaners and degreasers, but not nearly as expensive as injuries and lawsuits."
